Today, I’m sharing my tips (and a simple recipe) for making delicious chicken drumsticks. You’ll see, there aren’t many steps involved, but I assure you the results are amazing.
Before I show you the steps, I’m going to let you in on a little secret… Dry rubs are truly game changers. Seriously, whether you’re cooking chicken drumsticks, chicken wings, or a whole chicken, they’ll enhance the flavor of every bite of your chicken. No more bland chicken! (Also, just saying, if you use the incredible products I’m showing you (some are even from Quebec!), you can’t go wrong.)
As for the chicken drumsticks themselves, you can go with whatever you prefer, either skinned or skinless (or a mix of both). Personally, I’m a “skin guy”; to me, chicken skin is like bacon 2.0 (and that’s quite a compliment!), so if you want to taste even more happiness, I recommend you go with that option. If you want something healthier, however, skinless drumsticks are the best choice (otherwise, put the skin aside for me, I’ll come eat it š).
As for the ingredients, there are a lot. But don’t be fooled, you don’t have to use them all. In my case, I like to offer variety and try a lot of things, so I use one seasoning per drumstick, but you can very well use the same one on each of your drumsticks if you like.

Ingredients
- Tex-Max BBQ Quebec Style Dry MarinadeĀ , to taste
- Dry marinade Sweet Kansas BBQ Quebec styleĀ , to tasteĀ
- Spices The Rub The Hard Fat , to taste (These spices aren’t just sick, they’re amazing. Seriously, it’s crazy: taste it and you’ll freak out. They’re especially delicious with chicken. Definitely a must-try.)
- Simon’s Honey Roasted BBQ SpicesĀ to taste (This spice blend has a nice sweet taste and is one of my favorites. Trust me when I tell you, it’s the bomb!)
- Kansas Dry Marinade from BBQ QuebecĀ , to taste (If the good smell of this dry marinade doesn’t convince you, its smoky taste will. A truly sickening product (in the good sense of the word)!)
- Spicy BBQ coating, to taste (I discovered this product this year and I must tell you that I am not disappointed! It is super good and gives a spicy ākickā to food!)
- BBQ Quebec X Ferme Monette Western Spices , to taste (These spices are also among my favorites. They are miraculous and go very well with chicken.)
Directions
- Preheat the BBQ to 400°F with the burners on high and creating an indirect cooking zone.
- Meanwhile, coat a chicken drumstick all over with a dry rub of your choice over a bowl. (Cover the entire drumstick, even the boney part.) Repeat for each chicken drumstick.
- Reduce the burners to about half the heat, then place the chicken drumsticks on the top grill of the BBQ to cook. Let them cook slowly until their internal temperature registers 170°F on the Thermomax (or ThermoMax Jr.). (Time is key. Just like humans, BBQ food needs heat, moisture, and love. š„°)
- Move the drumsticks to the bottom grill (in the indirect cooking zone) and grill them for 2 to 3 minutes on each side until the skin (or the outside of the drumstick) has a caramelized and crispy appearance.
- When the drumsticks are almost cooked (3/4 cooked), pour a little BBQ sauce (of your choice)* on top.
- Remove the drumsticks from the BBQ, serve and enjoy!
Notes
If you like your drumsticks well caramelized and sticky with sauce, you are free to add your favorite BBQ sauce, but I recommend usingĀ Mamacita BBQ Quebec Sweet Nuit sauce or Bourbon Maple BBQ QuebecĀ sauceĀ .Ā
And there you have it, that’s all you have to do to enjoy some succulent chicken drumsticks!
However, I still have a little secret for you⦠If you want to serve even crazier and more perfect chicken drumsticks, I recommend using theĀ Napoleon cooking rackĀ . This great tool allows you to cook the drumsticks vertically. What does that do? Well, all the ācooking juicesā collect in the heads of the drumsticks and give them a really juicy taste. Itās really sick! š
