Panettone (the real Italian recipe)

Ingredients For 5 Person:

  • 120g _
    butter _
  • 65g _
    sugar _
  • 750g _
    of flour
  • 6
    egg yolks
  • zest
    grated lemon _
  • 8 tablespoons
    blond and brown raisins
  • 25 cl
    water

Preparation Steps:

STEP 1

Mix the yeast in lukewarm water with a little sugar, and let sit in a warm place until doubled in volume.

STEP 2

Add the egg yolks, salt, vanilla, lemon zest and the rest of the sugar, then 500 g of flour.

STEP 3

Add the diced butter, then the rest of the flour. Knead the dough, place it in a buttered terrine, sprinkle with flour and leave to rest for 45 minutes.

STEP 4

Add the diced candied lemon and the raisins and knead. Pour into a buttered mold, cover with buttered paper and leave to rest for 15 minutes.

STEP 5

Remove the paper, brush with softened butter. Bake at 200°C (thermostat 6/7) and cook for 10 minutes.

STEP 6

Reduce the oven to 150°C (thermostat 5) and cook for 30 to 40 minutes.
