Ingredients

SLICED CHICKEN BREAST 350 g
BAGUETTE BREAD SLICES 5-6
ROMAINE LETTUCE 1 head
EXTRA VIRGIN OLIVE OIL to taste
PARMESAN CHEESE to taste
SALT to taste
FOR THE SAUCE CORN OIL (230 ml)
LEMON JUICE 2 tablespoons
EGG YOLK (AT ROOM TEMPERATURE) 1
WORCESTERSHIRE SAUCE 1 tablespoon

Caesar salad is a famous salad of Mexican origin, created by Italian chef Cesare Cardini, who apparently invented this dish in the early 1900s by trying to reuse some kitchen leftovers. The resulting salad was well received by his customers and soon became popular, spreading widely in the United States and even in Europe. It is a tasty and satisfying dish, made special in particular by two elements: crispy golden bread croutons and the historic sauce, a sort of mayonnaise with the addition of Worcestershire sauce. Chicken Caesar Salad Recipe

      • Step 1
      • Remove the outermost and damaged leaves of lettuce 1, then remove the stem of the head and separate the innermost leaves. Rinse them under running water and dry them well.
      • Step 2
      • Cut slices of bread, then cut them into cubes and brown them on a hot plate. As soon as they start to become crispy, drizzle them with a little oil to brown them evenly while stirring. Turn off the heat and set it aside.
      • Step 3
      • Using the same hot plate, grill the chicken slices on both sides. Salt them and set them aside.
      • Step 4
      • In a narrow and tall container, collect the ingredients for the sauce: oil, lemon, Worcestershire sauce, salt, and egg yolk. Start blending with an immersion blender, moving up and down, until you get the consistency of mayonnaise. Set aside.
      • Step 5
      • Tear the lettuce into small pieces and collect them in a large bowl (or in four single-serving bowls). Then shred the chicken with your hands and distribute it over the salad.
      • Step 6
      • Add the golden croutons and the thinly sliced Parmesan cheese.

      • Serve the Caesar salad, completing it with the sauce just before consuming 7.   


        Tips

        Buy chicken breasts from your trusted butcher, choosing organic and free-range ones without the use of antibiotics. For a softer and juicier final result, you can replace the breasts with chicken thighs.

        You can also complete everything with some anchovy fillets, black olives, and desalted capers. If you like strong flavours, you can also add a teaspoon of whole-grain Dijon mustard to the sauce.

        There are numerous reinterpretations of Caesar salad: in addition to the most famous version with chicken, there are those who add poached eggs, steamed shrimp, smoked salmon strips, and diced avocado… In short, you can indulge yourself.

        Storage

        Caesar salad can be stored in the refrigerator, inside a suitable airtight container, for a maximum of 24 hours. Once dressed with the sauce, we recommend consuming it within a few hours; the risk is that it will lose its characteristic crunchiness.
