Pizza in a pan, or pizza without an oven, as I like to call it, is a sort of flatbread with the shape and toppings of a pizza. Pizza in a pan is perfect when you don’t have time, especially when you don’t feel like waiting a long time for the pizza dough to rise or when it’s so hot that just the thought of turning on the oven makes you sweat. In short, pizza in a pan is a compromise that you can try to prepare for your friends, even in a mini version, and make everyone happy. Of course, pizza in a pan won’t be super leavened; it won’t have as many bubbles as PIZZA IN a pie, but I assure you it was devoured in 10 minutes by me, even less time than I spent preparing it, but I assure you, just a little more because, as I already told you, it doesn’t need to rise. Servings: 4 pizzas in a 24 cm pan

Ingredients

. 600 g of 00 flour

. 360 ml of water

. 1 sachet of instant yeast for savory preparations

. 8 g of salt (+ a pinch for the sauce)

. 200 g of mozzarella

. 400 ml of tomato puree

. 4 teaspoons of extra virgin olive oil (+ 2 for the pan)

. oregano (or basil)

. 1 clove of garlic

Preparation

1. Prepare the pizza with pan dough.

2. Put the 00 flour in a bowl and make a hole in the center.

3. Add the extra virgin olive oil, room-temperature water, and instant yeast for savory cakes.

4. Mix and blend everything, then knead with your hands until you get a homogeneous            dough.

5. Let the dough rest for about 15 minutes while you prepare the sauce.

6. Put two tablespoons of extra virgin olive oil in a pot and heat them, then cook the              tomato puree, lightly salted, for 5 minutes so that it shrinks a little.

7. Cut the mozzarella into cubes and dry them well with paper towels.

8. Take the dough and divide it into four balls.

9. Roll out each ball with your hands or a rolling pin until you get a fairly thin sheet.

10. Heat a non-stick pan and cook one pizza at a time.

11. Cook on one side for 5 minutes, then flip it over.

12. Put a little tomato sauce, some cubes of mozzarella, and oregano on top of each pizza.

13. Season with salt and extra virgin olive oil and cook over low heat for another 5 minutes, then cover with a lid and cook for another 5 minutes so that the mozzarella melts.

14. Now that your pizza in the pan is ready, you can start preparing the others!

VARIANTS AND TIPS

The instant yeast for savory preparations is the equivalent of the yeast you use for cakes.

You can top your pizza without an oven if you like and add ingredients to your liking.

If you find pizza mozzarella, it will have a better yield because it won’t release water.
