Bananas Foster

A delicious twist on the classic Bananas Foster! Ripe bananas are simmered in a cinnamon-spiced brown sugar rum sauce, wrapped in homemade tortillas, then fried until golden. Topped with whipped cream, melted chocolate, and toasted pistachios, this dessert is crispy, creamy, and absolutely unforgettable.

Ingredients
  

Bananas Foster Filling

  • 3 ripe bananas some soft for sauce, some firm for filling
  • 4 tbsp butter
  • 1/4 cup light brown sugar
  • 1 tsp cinnamon
  • Pinch of salt
  • 1 tsp vanilla extract
  • 2 tbsp spiced rum optional, for flambéing

Homemade Tortilla Dough

  • 1 1/2 cups all-purpose flour plus more for dusting
  • 1/4 tsp salt
  • 2 tbsp oil or melted butter
  • About 1/2 cup warm water adjust for dough consistency

Toppings & Garnishes

  • 1/3 cup dry roasted pistachios or pecans, toasted and chopped
  • 1/4 cup semi-sweet chocolate chips or cocoa powder for drizzling
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract for whipped cream

Instructions
 

Toasting the Pistachios

  • Heat a dry pan over medium-low.
  • Add pistachios and toast 3–5 minutes, stirring constantly.
  • Remove when golden and fragrant. Cool, then chop roughly.

Preparing Bananas Foster Sauce

  • Melt butter in a skillet over medium heat.
  • Stir in brown sugar, cinnamon, salt, and vanilla.
  • Add chopped ripe bananas and stir until coated.
  • Let simmer until bananas soften and sauce thickens.
  • Remove from heat and carefully add rum. If flambéing, ignite with a long lighter and let the flame burn off. Set aside.

Making Homemade Tortillas

  • In a bowl, combine flour and salt.
  • Add oil and water, kneading into a soft dough.
  • Rest dough for 10 minutes. Divide into 4 balls.
  • Roll each into an 8-inch round on a floured surface.

Assembling the Tortillas

  • Place banana filling in the center of each tortilla.
  • Lightly moisten edges with water and fold to seal.
  • Press firmly and keep seam side down.

Frying the Tortillas

  • Heat oil in a deep skillet to about 350°F (1.5 inches deep).
  • Carefully add tortillas seam side down.
  • Fry each side 2–3 minutes until golden brown.
  • Drain on paper towels or wire rack. Keep warm.

Whipping the Cream

  • Chill bowl and beaters in freezer.
  • Whip cream on medium speed until soft peaks form.
  • Add powdered sugar and vanilla, then beat to stiff peaks.
  • Keep chilled until serving.

Melting Chocolate Sauce

  • Melt chocolate chips in microwave-safe bowl in 20-sec bursts.
  • Stir between intervals until smooth. Don’t overheat.

Final Assembly

  • Place fried tortilla on serving plate.
  • Drizzle chocolate sauce on top.
  • Add a spoonful of banana sauce.
  • Top with whipped cream and toasted pistachios.
  • Serve warm and enjoy!

Notes

  • For a kid-friendly version, skip the rum.
  • Use store-bought tortillas if in a hurry.
  • You can toast nuts in advance and store them airtight.
  • Swap pistachios with pecans or walnuts.
